3 medium sweet potatoes, cooked
120 g plain flour
1 tsp baking powder
1 tsp ground cinnamon
70 g caster sugar
1 egg, beaten
15 g unsalted butter, melted
120 ml milk
vegetable oil, for frying
blueberries, to serve
strawberries, to serve
icing sugar, to serve




Step 1: Prepare The Sweet Potato

Drain your cooked potato and mash gently with a fork.

Step 2: Make Your Batter

In a mixing bowl sieve together the plain flour, baking powder and cinnamon. Next add the eggs and the sugar and pour in the melted butter. Finally add in the cooked and mashed sweet potato and the milk. Give all the ingredients a good stir until they are well combined.

Step 3: Fry Your Pancakes

Add some vegetable oil to a frying pan and leave to get hot. When you can see steam rising from the oil your pan should be hot enough to cook your pancakes. Add a small amount of the batter to the pan to check. When hot add a heaped tablespoon of the batter into the pan and mould into a round pancake shape. Make 1-2 more pancakes, depending on the size of your pan, making sure you don’t overcrowd them. Leave the pancakes to cook for about 2 minutes and then flip them over. Leave to cook for 1-2 more minutes until golden on both sides and then remove from the pan. Continue until all your mixture has been used up .

Step 4: Serve

Serve your pancakes straight away, with blueberries, strawberries and a sprinkle of icing sugar, or any other topping of your choice.
