Penne Pasta in White Sauce, prepared using herbs of various kinds and vegetables including Chicken chunks marinated after being brined in salt and sweet water. This Chicken Penne Pasta recipe is sure to indulge it’s flavours into taste buds, enjoy the recipe of Penne Pasta in White Sauce 🙂

 

Ingredients

01 Chicken (Breast)
250 ml Water
01 tsp Sugar
1/4 tsp Salt
1/4 tsp Ginger Garlic Paste
1/4 tsp White Pepper Powder
1/4 Lemon Juice
02 Spring Onions
10 Garlic Cloves
1/4 Yellow Zucchini
1/4 Broccoli
1/2 Red Bell Pepper
Pinch of Salt (to Season Broccoli)
Pinch of Cumin Powder (to Season Broccoli)
04 tbl Spoons Olive Oil
1/4 Cup Black Olives
01 tsp Red Chilli Flakes
1/2 tsp Salt (as per your taste you may add)

For Boiling The Penne Pasta Noodles

01 Litre Water
02 tsp Salt
01 tsp Olive Oil
400 gms Penne Pasta

For The Pasta Sauce

01 tsp Olive Oil
20 gms Butter
01 tbl Spoon All Purpose Flour
01 Basil Leaves Stem
01 Parsley Sprig
1/4 tsp White Pepper Powder
200 ml Milk (Cold)
01 Cube Processed Cheese / Parmesan Cheese

 

Method

1) Wash the chicken breast and cut it into 1 inch cubes, add it to the brine (sugar and salt mixed in cold water) and let it rest for 15 minutes.

2) discard the brine solution and throw it away, secure the chicken cubes and marinate them using ginger garlic paste, white pepper powder and 1/4 lemon juice, keep aside for 30 minutes.

3) to a frying pan, add olive oil and stir fry the chicken cubes until they are white , which usually takes 5 minutes, and by now your chicken is half cooked, remove the chicken from the pan and secure it for later use.

4) in the same pan, you will be having some left over oil, to this you add garlic and saute for a minute then add spring onion whites and greens and saute for 3 minutes, then add the rest of the vegetables, add the vegetables which take more time to cook first and then you add the rest, in between you would also have to add the half stir fried chicken, make sure before adding broccoli you have seasoned it with salt and cumin / jeera powder.

5) the best way to cook , is by covering with a lid and cooking for 5 minutes at a low-medium flame.

6) in the mean while we will boil our pasta in a cooking pot add enough water around a litre and salt and olive oil and bring the water to a boil, when it’s hot add the pasta and cook for around 12 minutes, discard the water and secure and save the pasta, we will use this later.

7) to prepare the pasta sauce, grab a cooking pot to which you add, little olive oil followed by loads of butter and when the butter melts, you add all purpose flour (maida) and saute, toss basil leaves and parsley and cook for a minute , then gradually pour in cold milk as you stir this mixture constantly with a whisk to avoid lumps.

8) your pasta sauce is now ready, to this you will add the chicken and vegetables curry from the pan and the boiled penne pasta and mix very well like a whirlpool, finally you will top it with enough grated cheese and offer a final mix, cover with a lid and simmer at a low flame for 2 minutes, serve Penne Pasta hot , enjoy 🙂
